Eduardo Soler and two friends started Ver Sacrum in 2012 with the concept of growing and vinifying Rhone varietals. Their winemaking ethos focuses on fresh, low alcohol, lighter skin contact, native yeast, honest, and easy drinking wines. All grapes are hand harvested and most are foot crushed as they believe in minimum intervention in the vineyards and winery. Their Monastrell comes from a 15 acre vineyard in Los Chacayes in the Uco Valley of Mendoza. This area is home to the highest vineyard sites in Argentina and offers cooler and longer growing seasons for the grapes to fully mature with delicate fruit and floral notes punctuated by a bright acidity. Look for black cherry, tobacco, cocoa & dried leaves in a package that probably resembles more Gamay or Pinot Noir in color than it does its counterpart in the Southern Rhone.
