While Cortese is the newest addition to the Matthiasson family of wines, the Tendu label began six vintages ago. Tendu is French for "taut" or "tense", and the Tendu wines consistently display body, focus, and zest. The original package was inspired by old world wine culture and offered in one liter bottles with crown caps. In a move to be more environmentally conscious, Jill and Steve decided to stop importing European liters, instead chosing American-made 750ml bottles finished with glue-free compostable/recyclable corks. In 2018, they also decided to discontinue their Vermentino contracts and instead source the Italian variety Cortese from the deep clay loam soils of the Lost Slough Vineyard, located in the southernmost part of Clarksburg near the historic Chinese settlement town of Locke. This site stays cool at night during the summer allowing for high acidity and moderate alcohol levels. Fermentation was initiated with native yeast in neutral oak barrels, where the wine was allowed to complete malolactic fermentation so that the wine could be bottled unfiltered. In Jill's words "Employing oak and "malo" helps balance out the acidity and round out the wine with attractive texture that delivers stone fruits, orange peel, and minerality." Much like its Piemontese inspiration (Gavi di Gavi), this wine is easy to drink by itself, but pairs well with backyard barbecues and lighter dishes such as fish, summer pastas, and salads.
