Rueda is a patchwork of predominantly sandy soiled vineyards on the flat high plains located an hour’s drive northwest of Madrid. This is home to the indigenous white grape, Verdejo, along with pine nuts, raw sheep’s milk cheese and other foodie favorites. Demimo comes from family-farmed vineyards and offers a richer texture than most Verdejo. Its tropical fruit and piney, herbal notes are distinctive and charming. Pair this vibrant, Sauvignon Blanc-like white with “tortilla”, a national dish which is a baked omelet with thinly sliced potatoes sautéed in olive oil.
