Unculín Blanco comes from an organically-grown, family-owned, single vineyard called Hundiñias in the center of Valtuille de Abajo; planted with 60 to 100-year-old traditional bush vines. This ancient vineyard is known by elders in Bierzo for producing some of the best white wines in northern Galicia. A field blend of 70% doña blanco and 30% godello, the grapes arehandpicked, undergo a spontaneous fermentation by natural, indigenous yeast, then aged eight months on the lees in stainless steel. Serve with Ferrus (pronounced Fair-roose), a small brick of aged goat cheese from Spain witha dense, creamy paste. It offers aromas of citrus and herbs, and the flavor profile ranges from lemon cream to wild thyme and porcini.
