The 2018 Chenin de Jardin is made from 100% Chenin Blanc. The grapes are grown on rhyolite and schist soil. (For those of you, like me, for whom rhyolite is not a household name, it is an igneous volcanic rock made of quartz, sanidine and other minerals.) The Chenin de Jardin is a perfect example of the fine line that Chenin can walk with ripe honeyed apples, citrus, and tropical fruit on one side and high acidity with a strong strain of minerality running through on the other. Although many people think white wine doesn’t pair well with meat, I think Chenin Blanc proves them wrong. Pair the Chenin du Jardin with Roast Pork and Caramelized Apples and Shallots. The acidity cuts right through the fat of the pork—so delicious!
