Winegrower Mario Paoluzi founded I Custodi in 2007 and today produces five Etnean wines from four different vineyards, or contrade. “Aetneus” hails specifically from a contrada called Moganazzi, in the village of Castiglione di Sicilia. This farm is situated on the highly desirable north slope of Mount Etna, with elevations that reach past 700 meters. Soils are, well, volcanic, and the ancient vines are bush trained to retain moisture and protect from the intense Sicilian sun.
The 2016 is principally Nerello Mascalese blended with a small amount of Nerello Cappuccio, from 90-year-old vines. Some whole clusters are left intact for fermentation, which is carried out in stainless steel vats. The resulting wine is aged for 2 years in 500-liter tonneau barrels, then spends 24 additional months in bottle before release.
