White Santorini wine is produced from the exquisite native varietal Assyrtiko. The Gavalas team carefully hand harvests each berry from their traditional vineyards on the island, where the vines are coaxed to resemble baskets, with the fruit growing in the middle protected from the harsh sun and unrelenting winds. Believed to be one of the oldest vineyards in Greece, the vines are on original rootstock, never infected by the phylloxera louse that devastated nearly all European wines in the late 19th and early 20th centuries.
Once harvested, only 25% of grape juice is extracted, transferred to stainless steel tanks where a very cold fermentation takes place in stainless steel vats at very cool temperatures.
The resulting Assyrtiko is the most distinctive, dry, wine. In the glass, it is bright yellow with flashes of bright white. On the nose, the Gavalas Assyrtiko expresses delicate aromas of fruit - pear, lemon, and pineapple. On the palate, the wine is smooth, satiny, fruity, and full-bodied. It has bracing acidity and ala long appealing finish.
It is best served chilled at 8-10oC. An ideal accompaniment to seafood, white meat, and light cheese.
