After manual harvest the 50% Chardonnay, 30% Pinot Noir, and 20% Pinot Meunier, are all vilified in stainless steel tanks. It undergoes malolactic fermentation, 3 1/2 years lees aging, and 9g/l dosage. The wine is bright yellow with gold flashes, with citrus and white flowers on the nose. The wine’s straight forward and crisp character is fresh and pleasing. It’s the perfect aperitif to pair with cheese and light appetizers.
