A new pick from one of our favorite importers, we were so excited by this Champagne we just had to feature it by the glass as soon as we could. The Fresne family have lived and farmed their holdings in the north of the Montagne de Reims for 180 years, only beginning to estate-bottle their own wine in 2008. They are farmers first. “Les Nouveaux Explorateurs” is derived from three 1er Cru parcels and is 45% Pinot noir, 45% Pinot meunier, and 10% Chardonnay. The base wines complete malolactic fermentation, with the base vintage (2017) being blended with 20% of the previous vintage and 20% from a “perpetual reserve” tank begun in 2008. The wines spend 30 months on the lees and are bottled with a modest dosage. This results in a Champagne with the richer, aged character we look for this time of year, but with plenty of freshness and cut. Drink it throughout the meal, or alone in your kitchen (we won’t tell).
